Retro Recipe Monday – Polynesian Shrimp


A couple years ago we helped a good friend move his grill parts business out of his gigantic warehouse. He was downsizing/partially retiring. We inherited some real gems. Among the treasure was a stash of recipes and cookbooks from the 70s and 80s. Use skewers to make this an easy on-the-grill meal!

Polynesian Shrimp

Ingredients: 1lb fresh or frozen shrimp – peeled and deveined, 6-8 bacon slices – cut in half, 1 banana, 1 6oz can pineapple chunks, brown sugar or honey, fish marinade (see below)

 

Directions: Soak shrimp in marinade for 1hr. Wrap shrimp in bacon slice before placing on skewer. If very small shrimp are used, wrap 2 or 3 together. Alternate shrimp and fruit on skewers. Brush with honey or brown sugar. Place on grill and cook, turning and basting frequently with remaining honey or brown sugar, for 12-16 minutes, or until shrimp are pink and bacon is crispy.

 

Fish Marinade: equal parts white wine, soy sauce, and salad oil. Note: lemon juice may be substituted for white wine.

 

Enjoy it! And I think “salad oil” would be olive, or canola oil. Not 100% sure on that..

What is a Drip/Grease Tray/Pan? (and where can I get one?)

The grease tray is a separate part in some grills that catches the grease and drippings from the delicious food you cook on your gas grill. If you have a little cup that catches all that, count yourself lucky. They are easier to empty, clean and replace than an entire tray.

After a few years of use, a lot of grill owners find the grease tray is rusting and failing to do its job. This results in greasy gas tanks (ew…). So, what to do? Easy – replace it. Right?

Not so fast. The grease tray is not a particularly available part from most manufacturers or replacement companies.

We now have a number of styles available. This is because you called us and let us know what you needed! Our response was to inform our suppliers and get the parts made.

If you need a different part than the ones listed above or are in a jam, here’s our best suggestion: You MAY be able to line your original rusty grease tray with one of those aluminum baking pans from a local grocery store. The cost is low and they are easy to find and manipulate into place.
